Fluffy Pancakes


Hello everyone! It has been a while since I have posted a recipe. I have been busy trying out  new recipes to share with you all. I have had fun during the testing process and I can't wait to post what I have been up to. This morning I woke up and wanted some old fashioned pancakes. I pulled out the ingredients and ended up with a very yummy breakfast! Try it out! They are super easy and you will NEVER use a box mix again! Oh, and they go great with my homemade syrup recipe :)






INGREDIENTS
*3/4 cup butter milk
1 cup all purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted

*If you do not have butter milk, use 3/4 cup of milk and 2 tablespoons white vinegar. Combine milk with vinegar in a bowl and set aside for 5 minutes to "sour"


DIRECTIONS
-Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.

-Whisk egg and butter into butter milk or into the "soured" milk.

-Pour the wet ingredients into the flour mixture and whisk until just combined. I like the lumps :) If you don't care for the lumps just whisk until lumps are gone.

-Add any extra happy stuff you would like in your pancakes if you desire (blueberries, chocolate chips, etc)

-Heat a large skillet over medium heat and coat with butter (or cooking spray)

-Pour 1/4 cupfuls  of batter onto the skillet.

-Cook until bubbles appear on the surface.

-Flip with a spatula, and cook until browned on the other side.
